SALSA DE MOLCAJETE ROJA Y VERDE ( MOLCAJETE SAUCE RED AND GREEN)

Ingredients for 4 pax

4 roasted and peeled red tomatoes or 12 roasted green tomatillos unpeeled
¼ roasted small onion chopped
1 or 2 roasted jalapeño papper seeded, deveined and chopped
1 roasted small clove garlic
4 branchs of chopped cilantro
Sea salt of you taste
In a molcajete (lava Stone mortar), smash completely the sal, the garlic, the papper, the onion and the tomatoes or tomatillos.
Add the chopped cilantro to decorate
CLASSIC GUACAMOLE
Ingredients for 4
Small piece of garlic
Sea salt of you taste
2 slices finely chopped of onion
2 avocados
4 branches of chopped cilantro
The juice of1/3 of lime
In a mortar smash the salt, garlic, and the avocados, add the lime juice and the cilantro, mix everyhing.
Serve with fresh chips.
