FISH FILET

Ingredients:

  • 4 Mahi-mahi or red snapper fish filet.
  • 5 tomatoes seeded and roasted
  • 4 slices onion
  • ¼ cup white vine
  • 3 diferent colors, bell pepper
  • Rosemary leaves (to taste)
  • fresh Basil leaves (6)
  • Thyme 1/8 tsp
  • 1 Garlic clove
  • Olives
  • Olive oil
  • Salt & pepper
  • ½ Bay leave
  • Oregano (pich)

Instructions:

  1. Salt and pepper the fish filet and season with the 5 basil leaves (dice with your hands)
  2. Wrap the fish filets with aluminum foil.
  3. Put ¼ cup of olive oil in casserole and warm up, add the garlic, the rosemary, bay leave, onion, thyme and stir fry for 3 minutes.
  4. Add the tomatoes and fry for 5 minutes.
  5. Add ¼ cup of white vine and boil until the tomatoes melt (5 minutes)
  6. Add the olives.
  7. Season with salt.
  8. Steam the fish filets, 10 to 15 minutes approximately.
  9. Open the foils and place the fish filets on a plate.
  10. 10.Dress with the sauce and serve warm.
