Ingredients:
- 4 Mahi-mahi or red snapper fish filet.
- 5 tomatoes seeded and roasted
- 4 slices onion
- ¼ cup white vine
- 3 diferent colors, bell pepper
- Rosemary leaves (to taste)
- fresh Basil leaves (6)
- Thyme 1/8 tsp
- 1 Garlic clove
- Olives
- Olive oil
- Salt & pepper
- ½ Bay leave
- Oregano (pich)
Instructions:
- Salt and pepper the fish filet and season with the 5 basil leaves (dice with your hands)
- Wrap the fish filets with aluminum foil.
- Put ¼ cup of olive oil in casserole and warm up, add the garlic, the rosemary, bay leave, onion, thyme and stir fry for 3 minutes.
- Add the tomatoes and fry for 5 minutes.
- Add ¼ cup of white vine and boil until the tomatoes melt (5 minutes)
- Add the olives.
- Season with salt.
- Steam the fish filets, 10 to 15 minutes approximately.
- Open the foils and place the fish filets on a plate.
- 10.Dress with the sauce and serve warm.
