Ingredients
• 1 turkey or 1 Chicken cut into pieces skinless
• 3 pieces of ancho chile, clean- no veins, no seeds
• 3 pieces of guajillo chile- clean- no veins, no seeds
• 3 pieces of pasilla chile, clean-no veins no seeds
• 3 pieces of apple chile, clean
• 4 roasted tomatoes
1 purple onion
• 50 grams of toasted sesame seed
• 50 grams of raisins
• 50 grams of peanuts
• 50 grams of pumpkin seeds
• 5 fried plantain banana slices
• 1 tosted tortilla (chips)
• 8 pepper corns
• 3 cloves
• pinch of aniseed
• little piece of Cinnamon (stick)
• 2 garlic cloves
• 2 chocolate bars (bitter chocolate) or 100 gr cocoa beans
• 100 gr brown sugar
• 3 spoon vanilla
• 1 spoon of oil of your choice
• 1 branch of rosemary
• pinch of thyme
• pinch of cumin
• 1 cups of chicken stock or water
• Salt of your taste
Instructions:
1. Clean the chicken, cut in pieces and boil with the onion and garlic, without water in a stainless steel pot tightly covered with the onion, 2garlic cloves, and salt.
2. In a casserole, tosted the rosemary, the pepper corns, the thyme, the cloves aniseed, rosemary, cinnamon and the cumin, then grind all in a mortar.
3. Seeded and deveined the dry chiles
4. Toast in a casserole the pumpkin seed, sesame seeds, peanuts, almonds.
5. In a big casserole put the oil and fry the tomatoes slicced in quarters, the dry pappers add the raisins, brown sudar, banana, chips and the vanilla.
6. Blend the mix, the condiments and the sedds, little by little with the chicken broth and the water until you get a sauce.
7. Put the sauce back in the casserole, add the chicken and let boil, taste, if you think need more salt add more.
8. Dress the chicken pieces with the mole sauce and sprinkle some sesame seed on top of the sauce (for decoration)
9. Serve with white rice
