Rosie's Cooking Classes

At Rosie’s Vallarta Cooking our mission is to offer an authentic experience of our Mexican cuisine. Rosie is a mexican mom/grandma/wife who learned to cook from her grandmother, all different dishes from scratch as a pre-hispanic way.

She will take you from buying and selecting fresh ingredients at the farmers market to preparing and tasting the most delicious and typical Mexican dishes. We are positive that with the right tutorship any person is capable of preparing mouth watering Mexican food.

We offer a cooking workshop at Puerto Vallarta. Are you in Nuevo Vallarta, Bahía de Banderas, south of Puerto Vallarta or coming in a Cruise ship? Not a problem, our pick up point is strategically located and easy to reach from any of the aforementioned areas. Once you sign up in a cooking class you will meet Rosie at our strategic meeting point, she will be in a yellow t-shirt with the logo of Rosie’s Vallarta Cooking.

Who is Rosaelia Romero Rodriguez? How did these classes begin?​

This is a bit of a long story to tell and if you want more details you will have to go and meet Rosie so she can tell you every detail.​
It is impossible to encapsulate all that Rosie is in one word, but we can sum it up as a wealth of knowledge in a suit of an exceptional woman. Mother, wife and recently grandmother; as a good Mexican she has dedicated her life to the well being of her family and the loved ones around her, she comes from El Mapache, municipality of Tomatlan in the south of Jalisco.
She grew up there until the age of 12 when she moved to Puerto Vallarta to continue her education. In her hometown she grew up with her grandmother from the age of 3 until the age of 12, since her mother had to go to the city to work in order to provide for her and her siblings. During this time Rosie acquired a lot of knowledge from her grandmother named Hermelinda, who had a lot of knowledge of plants and their healing properties as well as ancestral recipes prepared without electricity or modern tools as we have today. To help her mother with the expenses that going to school implied, she worked in the old Municipal Market "Emiliano Zapata" of Puerto Vallarta, located in the center of the city. This market in its most glorious years was a booming market, with many stalls selling fruits, vegetables, butcher's shop, cheese, among other things. You could find everything fresh, even freshly prepared food because on the second floor there were several small local food restaurants, 2 of them owned by Rosie's aunts where she worked at Café Doña Julio and Restaurante La Marina from the age of 12 until she was 28 years old.

History​

When her second daughter entered Kindergarten she worked in the dining room preparing food for the little ones, from there she is known for her famous flan. When her third child graduated from Kindergarten (5 years later) she stopped working in the institution and dedicated herself more to her time at home, without ever leaving activities to earn extra income such as selling sheets, fruit, desserts or catalog products. In addition to her culinary knowledge Rosie has taken courses in typical desserts of the region, relaxing massages, costume jewelry, blanket painting and dressmaking.
Her husband Archivaldo carried the major economic burden of the household for several years being from bartender, the best waiter at the Zapata restaurant to certified tourist guide. Then one day he became ill and the recession affected their lives in such a way that they had to look for new ways to earn money. Rosie decided to study for a diploma to become a certified Tour Guide as well, while at the same time going back to high school and taking English courses. (2010 to 2011) .
o conclude her certification Rosie had to do a dissertation in which she would design a tour. Guided by her passion for gastronomy she decided to do cooking classes, which initially the tour would be taken in a space in the mountains south of the city, where she would have fruits and vegetables in her garden and prepared more pre-Hispanic recipes. As fate would have it, the project could not be carried out as she had planned but little by little she began to give cooking classes to her husband Archie's clients in their home in Puerto Vallarta. This is how little by little improvements have been made in the classes, as well as in Rosie's house which has been modified little by little to make it a more comfortable space for her guests. Hermelinda, Rosie's grandmother, lived to be 98 years old, living a full, sociable life, always smiling. Rosie continues with her gastronomic legacy, passing on the knowledge she left her as a tribute to her memory and her life.
